Ingredients:
1/2 tsp vanilla
1 egg
1/4 tsp salt
1 cup flour
1 cup sugar
1/2 cup water
1 stick butter
3 tbs heaping cocoa
1/4 cup buttermilk
1/2 tsp baking soda
For the Icing:
1/4 cup milk
1 tsp vanilla
1 lb confectioners sugar
5 heaping tbs cocoa
1 stick butter
Directions:
Dissolve the baking soda in buttermilk, in a small bowl.
In a sauce pan, at low temperature melt the cocoa and butter together.
Add water when smooth.
In another bowl, combine together salt, sugar and flour.
Add the egg and cocoa mixture, and mix at low speed.
Add the vanilla and buttermilk mixture, and beat until smooth.
To a 12 compartment muffin pan add paper baking cups, and fill each 2/3 with the batter.
Bake for 20 minutes at 350 degrees.
To make the icing:
Melt the sugar, butter and cocoa, stirring to combine.
Add the milk slowly as mixture thickens, until creamy.
To place icing on the cupcakes, use a piping bag. Spread icing on cupcakes alternatively.
