The Best Chocolate Cheesecake Recipe

This Chocolate Cheesecake is creamy, fluffy and based on the best chocolate cheesecake recipe. With chocolate ganache and Oreo cookie this recipe is
the right thing for chocolate lover’s. Total time to make this recipe is about 1 hour and 30 minutes.

Serves: 24 slices

What you will need:

For the chocolate cheesecake:

1 1/3 cups sour cream

4 1/2 cups granulated sugar

40 oz cream cheese

8 large eggs

16 oz dark chocolate, cooled to room temperature and melted

For the Ganache:

4 teaspoons corn syrup

1 cup cream

6 oz dark chocolate – chopped

For the Oreo Cookie Crust:

2 2/3 cups Oreo cookie crumbs

2/3 cup unsalted butter , melted

How to make:

Preheat oven to 350°F. With aluminium foil wrap the outsides of springform pan and make sure that the sides and bottom are covered tightly.

In a medium bowl combine together the cookie crumbs and the melted butter to make the chocolate cookie crust. Than into the bottom of the pan press this mixture. Bake for 8-10 minutes until dry. Set aside and allow to cool.

In a large bowl put the cream cheese and using an electric mixer beat on medium speed until smooth. Add the sugar and continue beating until smooth. Than add the sour cream and beat until smooth and combined. It’s necessary to scrap down sides of the bowl. Add the chocolate-melted and continue beating. Than add the eggs 1 at a time until well mixed.

In the middle of a large roasting pan place the prepared springform pan with the cheesecake crust. About 1/2 inch of boiling water pour into the bottom of the roasting pan. That’s your water bath. Pour the cheesecake batter over crust and put in the oven. Bake for 50 – 70 minutes or until center is almost set.

Remove the pan from the oven and with a thin knife run around the edges of the pan. In the water bath, let the cake cool until water is room temperature. Remove the aluminium foil and refrigerate until completely chilled.

In a small saucepan melt together corn syrup, chopped chocolate and heavy cream. Whisk until smooth.

Slice and serve with chocolate sauce or mini chocolate chips.
