A simple, Summer Pasta Salad recipe that is perfect for all of your summer BBQ’s and potlucks! It is a great recipe for using up all of the vegetables from your garden or farmers market haul. I’m not specifying quantities as I tend to think that with salads you go for what you like.
Summer Pasta Salad
Ingredients
Salad:
- Penne Pasta – cooked & then cooled
- grape tomatoes – halved
- kalamata olives – halved
- fresh mozzarella
- half a bunch of basil
- bunch of chives
Dressing:
- equal amounts of red wine vinegar & extra virgin olive oil
- salt & pepper
- garlic
Instructions
- Combine salad ingredients
- Combine dressing ingredients
- Add dressing to salad and toss to coat evenly right before serving
