Absolutely delicious! This Roasted Pork Tenderloin Caesar Salad is a quick and easy salad thats perfect for BBQs, picnics, or a quick lunch!
Ingredients
- Salad mix
- Cherry tomatoes
- Ceasar dressing
Roasted Pork Tenderloin:
- 2 teaspoons dried thyme, or 2 tablespoons freshly chopped thyme
- 2 teaspoons dried oregano, or 2 tablespoons freshly chopped oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper, freshly ground
- 2 teaspoons olive oil
- 2 pound lean pork tenderloin
Instructions
Roasted Pork Tenderloin
- Preheat oven 400 F. Coat a shallow roasting pan with cooking spray.
- Combine thyme, oregano, garlic powder, onion powder, salt and pepper in a small bowl; set aside.
- Rub or brush oil all over pork. Sprinkle thyme mixture all over pork and transfer to prepared pan.
- Roast until an instant-read thermometer inserted in center of pork reads 160 F. about 30-40 minutes.
- Let stand 10 minutes before slicing into thin (about 1/2 inch thick) slices.
Assembly
- Use as much salad mix, tomatoes, and dressing as you would like.
- Toss together to combine
- Add pork tenderloin, and enjoy!
