Quick and Easy – Triple Chocolate Layer Cake

For this cake you will need just 40 minutes. So delicious and Easy recipe that is family favorite in our house.

For the Cake you will need:

1 ¾ cups caster sugar

2 teaspoon bicarbonate soda

1 cup buttermilk

2 eggs

¼ cup espresso coffee

1 ¾ cups The Healthy Baker Plain Flour

¾ cups unsweetened natural cocoa powder

1 teaspoon baking powder

½ cup auzure Canola Oil

1 teaspoon vanilla paste

1 cup chocolate chips, roughly chopped

For the Icing you will need:

2 cups icing sugar

2 tablespoon buttermilk

500g cream cheese

3 tablespoon cocoa

How to make it:

Preheat the oven to 180C.

Grease and line a 24cm cake tin.

In a bowl combine the buttermilk, eggs, vanilla and oil and mix well. Than add the dry ingredients and mix again.

After that add the coffee and mix again.

Into prepared cake tin pour the butter, smooth over the top and bake for 35 minutes.

Let cool the cake for 10 minutes in the cake tin than turn out onto a wire rack to cool completely.

To make the icing mix all ingredients in the bowl until light and fluffy.

After that to frost the cake with a bread knife cut in a half horizontally, that half of the frosting spread on the cut-side of one piece of the cake, that top with the other and the remaining frosting.

To decorate sprinkle with chocolate chips.
