You have to try this Chicken Souvlaki with Tzatziki Sauce or Greek kabobs. Fantastic flavor for chicken. This marinade can also be used for pork.
Ingredients:
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1 1/2 pounds boneless, skinless chicken breast halves – cut into bite-sized pieces
Sauce:
1 (6 ounce) container plain Greek-style yogurt
1/2 cucumber – peeled, seeded, and grated
1 tablespoon olive oil
2 teaspoons white vinegar
1 clove garlic, minced
1 pinch salt
6 wooden skewers, or as needed
Directions:
In a large resealable bag, combine together lemon juice, 1/4 cup olive oil, oregano, 2 cloves minced garlic and 1/2 teaspoon salt. Add the chicken, then coat with marinade, squeeze out excess air and seal the bag. In the refrigerator marinate for 2 hours.
In a bowl mix together 1 tablespoon olive oil, cucumber, 1 clove minced garlic, vinegar and 1 pinch salt. For flavors to blend, refrigerate tzatziki sauce about 1-2 hours.
Preheat an outdoor grill (medium-high heat) and lightly oil the grate. In a bowl of water, soak wooden skewers for about 15 minutes.
Remove the chicken from marinade, then thread onto soaked skewers.
Discard unused marinade.
On the preheated grill, cook the skewers, frequently turning until nicely browned on all sides, about 8 minutes per side. Serve with tzatziki sauce and Enjoy!
