Dulce de Leche Chocolate Cheesecake Bars Recipe is a creamy, caramel and sweet dessert that the whole family will love.
Serves: 48 bars
What you will need:
For the crust:
1/2 teaspoon ground cinnamon
2 1/2 sticks ( 20 tsps ) unsalted butter, melted
4 1/2 cups finely ground graham crackers
4 tsps sugar
Non-stick vegetable oil spray
For the filling:
6 8-ounce packages cream cheese, room temperature
2 cup sugar
6 large eggs
1 cup purchased dulce de leche
4 tsps vanilla extract
For the Glaze:
1 1/3 cup purchased dulce de leche
6 tsps heavy whipping cream
Sea salt
How to make:
To make the crust:
Preheat the oven to 350°F. With nonstick spray coat a 9x13x2-inch metal baking pan. In a bowl combine sugar, cinnamon and graham cracker crumbs and beat with electric mixer. Add melted butter and continue beating until smooth. Press the mixture onto the bottom of the pan. Bake for 10 minutes. Set aside and allow to cool completely.
To make the filling:
In a bowl combine sugar and cream cheese and beat until creamy. Occasionally scrap down sides of the bowl. 1 at a time add the eggs and continue beating. Add the vanilla and dulce de leche and beat until smooth and well combined. Over cooled crust evenly spread the batter. Bake for for 38 minutes. Set aside and cool completely.
To make the glaze:
In a microwave-safe bowl melt 6 tsps cream and dulce de leche until melted. Over cooled cheesecake pour the glaze. Refrigerate for about 1 hour.
