Cheesy Zucchini and Pasta Bake

Kids LOVE mac-n-cheese. Why not make it with some veggies hidden inside of it? Just like in this Cheesy Zucchini and Pasta Bake!
Ingredients
- 1 cup whole grain elbow macaroni (or preferred pasta shape)
- 3 medium zucchini
- 1 onion
- 1 cup grated cheese
- 4 oz. ham
- 2 carrots
- 3/4 cup self raising flour
- 4 eggs
- 1/3 cup canola oil
- 1/3 cup milk
Instructions
- Preheat oven to 350F.
- Boil water and cook pasta as per directions for pasta. Drain in a colander and rinse under cold water. Set aside.
- Grate zucchini and place onto a clean tea towel. Wrap towel around zucchini and squeeze out excess liquid.
- Grate carrot and onion into bowl. Add cheese, ham, pasta, and flour.
- In a separate bowl, beat eggs lightly. Then add milk and oil and mix again.
- Add egg mixture to carrot mixture, and mix well so thoroughly combined.
- Line lasagna type dish with parchment paper. Pour mixture into dish and then place into oven.
- Bake for 25 minutes or until a nice golden color.
- Remove from oven and let the bake sit in the dish for at least 10 minutes before removing to cool onto a rack.
- Do make sure you remove the bake after 10-15 minutes. If you don’t, the bottom tends to get a bit soggy.
