1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup firmly packed light brown sugar
6 tablespoons granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups semisweet chocolate chips
Preheat the oven to 350 degrees F. Spray 2 baking sheets with non-stick spray or line with parchment paper. (For best results, use parchment paper).
In a medium bowl, sift the baking soda, salt and flour together.
In another large bowl beat together the sugars and butter, until smooth using an electric mixer at medium speed.
Add the vanilla and egg and mix on low speed, until well mixed.
Add the flour mixture, gradually and mix in until just incorporated. Do not overmix.
Add in chocolate chips and stir with a wooden spoon, until incorporated. Again do not overmix.
If dough is warm let chill.
Using heaping tablespoon, onto the prepared baking sheets, drop the dough, 6 to 8 per pan. It depends on size you are making.
1 sheet at a time, bake the cookies, until the edges and bottoms are lightly browned and the tops feels firm on touch.
Bake small cookies 8-10 minutes.
And the large cookies bake 10-13 minutes.
Let cool on the baking sheets for 5 minutes, then to cool completely transfer to wire racks.
Depending on size makes 18-30 cookies.
Serve and Enjoy!
